Open Sandwich with Sliced Chicken Breast and Strawberry Chilli Chutney

Ingredients

  • 1 piece of medium-sliced sourdough bread
  • 1 tsp Annabel’s Deliciously British Strawberry Chilli Chutney
  • 1 chicken breast (sliced)
  • Rocket leaves
  • 1 red onion (thinly sliced)
  • 2 cherry tomatoes (yellow and red)
  • Salted Butter
  • Mayonnaise
  • Salt and pepper
  • 1 tbsp Annabel’s Deliciously British Strawberry Salsa (optional)

Instructions

STEP 1

Toast 1 large piece of sourdough bread (medium sliced), and butter well with salted butter. Spread a generous covering of good quality mayonnaise on top.

STEP 2

Slice the chicken breast and add 2 or 3 slices to the top of the toast.

Season to taste with sea salt and freshly ground black pepper.

STEP 3

Add a spoonful of Annabel’s Deliciously British Strawberry Chilli Chutney on top of the chicken.

Garnish with rocket, red onion and 2 cherry tomatoes (halved).

Add a little salsa from Annabel’s Deliciously British Strawberry Salsa recipe if you have some made up (optional, delicious).
