Strawberry, Brie and Basil Panini

Ingredients

 

For the roasted strawberries:

  • 450g strawberries

  • 1/2 tablespoon of olive oil

  • 1 tablespoon of Annabel’s Deliciously British honey

  • 1 tablespoon balsamic vinegar

  • Pinch of salt 

For the sandwiches:

  • 4 ready to cook baguettes/paninis

  • 140g brie, sliced
  • 85g fresh basil, chopped

Instructions

 
 

STEP 1

Preheat the oven to 200ºC.

In a bowl, drizzle the olive oil, honey and balsamic vinegar over the strawberries, then sprinkle with the salt. Toss to combine and spread in an even layer on the baking sheet. Bake for about 20 to 25 minutes, stirring once halfway through, until tender and the berries have released most of their juices. Let cool for about 5 to 10 minutes.

STEP 2

Pre-heat the over according to the instructions for cooking the baguettes/paninis.

Fill each baguette with sliced brie, strawberries and add basil to taste.

STEP 3

Cook the baguettes according to package instructions.

STEP 4

Once cooked, serve immediately.
