Strawberry and Whipped Feta Filo Cups

Ingredients

  • 12 filo cups (pre-made)
  • 50g cream cheese
  • 100g feta cheese
  • 1 tbsp Annabel’s Deliciously British honey (plus extra to drizzle)
  • 4-5 Annabel’s Deliciously British strawberries (chopped)
  • Lemon zest (to taste)
  • Fresh mint (to garnish)
  • Balsamic glaze (to finish)
Strawberry and Whipped Feta Filo Cups

Instructions

STEP 1

Before you begin, take the feta, cream cheese, and strawberries out of the fridge and allow them to reach room temperature.

STEP 2

Crumble the feta into a food processor and pulse into small crumbs. Add the cream cheese and honey to the feta and blend together until creamy. For an extra citrus punch, add lemon zest to taste.

STEP 3

Transfer the filling into a piping bag (or a plastic bag, with one corner cut) and pipe the filling equally into your filo shells.

STEP 4

Top with the chopped strawberries and garnish with a sprig of fresh mint. Finish with a drizzle of balsamic glaze (and extra honey, if you like)!
